I heard this one on NPR last fall, and it sounded too good to pass up. I'll try it for the first time fall 2011.

This is absolutely fantastic. Made a huge batch for a Boxing Day party and they licked the sauce toureen. A bit of work, but great for that special occasion.
For extra creamy, use a Kitchen Aide type appliance and whip. Use low fat items - you won't notice the difference. And if you follow Weight Watchers, each serving should be around 4 pts... and these are HEAPING large spoonfuls per serving. I leave the skin on for added nutrition.
A chef on YouTube said it best: macaroni and cheese is not a low-fat dish. But I say if you are going to indulge, at least get it done right. This is approximated from Sarita's Mac and Cheese on 1st and East 12th in the East Village.

Here's a great turkey gravy without added salt. If you use broth and drippings from an injected turkey, that will add salt to the mix.

I created this recipe to serve to my husband that has diabetes. The crust isn't great for you...but it is a nice occasional dessert! I make this on holidays!
Using fresh pumpkin from the farmer's market and an organic sweet potato, this yummy soup has so much flexibility. Add white beans (canned cannelli) for a bit more umph.
The sugar, fat and eggs are reduced; fresh pumpkin and whole wheat flour are included to make this dessert a healthier option. You can frost with Brown Sugar Cream Cheese Frosting, which has very little sugar.

I came up with this Recipe because I knew basically what I wanted, but did not know the exact amounts. So I guessed.
Originally, a Pumpkin Bread recipe, however; by substituting 1 cup of fresh cooked and mashed sweet potatoes for the cup of canned pumpkin you can make Sweet Potato Bread.
This is a twist on the traditional scalloped potatoes dish. The sauce is slightly sweet, rather than savory. It makes a great side dish at Thanksgiving rather than the usual canned sweet potatoes topped with marshmallows! I would love to see this recipe get a 'Chef Makeover' to see how the fat, sugar, and calories can be reduced without drastically changing the essence of the dish.
