This is a modified recipe from Lorna Sass' Complete Vegetarian Cookbook, p.240. I will be baking the squash in a pan to caramelize the tops.
My mother-in-law was a dear friend of mine while she was alive. She had so many wonderful attributes, but cooking really was not one of them! My husband loves to tell the story of tuna fish for Thanksgiving, and the time she boiled pork chops for dinner! But she had a few recipes that totally rocked! One of those was her cornbread! Now this is a Southern cornbread recipe, so don’t expect any sugary sweet, cake-like, Jiffy mix! This is delicious and salty, and only gets better with a great, big slatherin’ of butter on it! Try it with beef stew for a knock out dinner.
mix first seven ingredients together and spread in 9 x 12 inch greased pan. For topping, melt butter add sugar and remaining ingredients. Sprinking the topping on the first mixture and bake at 350* for 35 min

This is a big favorite at my house. Upon evaluation, I realize that it is a bit high in sodium. I would suggest substituting unsalted butter or vegetable oil, if that is an issue.
I found this recipe online. I used my own crust recipe, decreasing the shortening by 1/4 cup and increasing the water by the same amount. I substituted Splenda for part of the sugar. I also cut the pies into 8 pieces rather than 6. This reduced the calories from 468 to 261.

I have down 12 oz of cornbread. I use a large cast iron skillet. If it is not 12 oz. let me know.
This is a delicious side to pork loin, turkey, or roast chicken. For those who love cranberries but find the canned sauce too sweet, you will love this one!

I was experiementing in the kitchen, trying to come up with a healthier option than most quick breads for a breakfast option for my 4 year old son. I came up with this delicious, moist and (relatively) healthy pumpkin bread. It's filling and not too sweet.

A nice side-dish or even a desert with the addition of maple syrup. Make it special by using a semi-sweet white wine. Sweet or dry white wines work well, too. Top with slivered almonds, chopped walnuts or pecans.
