Any beans will be approximately the same caloric value. Add as many fresh veggies is you like - it will lower the total caloric value and increases the number of servings. Any combo of sweetener and vinegar works.
This isn't really a light recipe, but it is definately tasty and a big hit when entertaining. It's my most requested dish.
Really good with quinoa, couscous, or brown rice.
You can use chickpeas as well - my gilrls don't like them so I switched to great northern.

I do use Chicken broth or Veggie Broth - both are equally good. Of course you should go with the Veggie if your a vegetarian. :)
Butternut squash risotto cakes are a wonderful meal anytime of the year. This dish is vegetarian but not vegan.

This is my fav eggplant curry mom makes at home:) you substitute sesame seeds in the place of poppy seeds or even peanuts grounded:) I used poppy seeds.
