This is best served with whole wheat fettucini. Goes well with chicken or salmon. Or simply serve as is for a meatless meal that is quite filling. Add a side of steamed broccoli and mushrooms and serve strawberries topped with whipped cream for desert.

I used to get wonderful tempeh scallopini in Denver. This isn't quite it, but it's the best substitute so far. The restaurant served it on mashed potatoes with a side of cooked greens.
Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito."
