This is a fun spin on pumpkin spiced, or ginger spiced muffin
Bananas and Cherries are my favorite fruits. I mix in Chia seeds for the extra iron.
This taste better when refrigerated at least three hours to blend flavors.
I have a ton of tomatoes and I found this recipe from How Sweet it Is. I modified it due to ingredients I had, but let me tell you it tasted so good! It would be awesome tasting if you added some cooked shrimp to it!! Give it a try and let me know what you think!
Colorful, fun to make, heathy, filling & delicious! Great for parties & potlucks, and excellent as leftovers, too.

Optional add nuts or blue berries. You may omit the coconut oil to reduce calories.
This is a delicious omelet recipe that I invented one morning. It serves two but can easily be increased for more people.
The Heidi Swanson recipe I make most often. I eat this with disturbing regularity, normally with a poached egg on top at home. When I take it to work for lunch I take an avocado with me to add after I've reheated it.
An easy protein to add to any meal, and the "secret ingredient" (mustard) makes it taste awesome!
I love this dish at Panda Express. This is my lower fat version...one of my favorites!
