Quick and easy to make, I sometimes share with my husband or keep some for the next day. I usually will eat it with 1 slice of WW bread (Calories for bread not included since it is optional)

Adapted from a Sandi Richard recipe, these baked-not-fried vegan curry spring rolls are just as crispy as the deep-fried appetizers, made with phyllo pastry and just a touch of oil spray. Delicious with plum sauce or sweet-n-sour sauce.
This dish is similar to eggplant parmesan, but is baked instead of fried. I use a chunky spaghetti sauce to add extra veggies to the mix. I also like to serve it over couscous. It is higher calorie than some of the options on here, but is well-worth it in nutritional value

This is a great veggie main, and the lefotver rice makes great faux-meatballs if you use a glutinous rice to begin with. But it's great with any variety of long grain rice, so enjoy! In Egypt, this is also served with elbow macaroni mixed in, but I had it both ways when I was there and I find I prefer it without the pasta (it made it too heavy for my tastes). I've also used the tomato sauce as a pasta sauce before--it's a nice low-cal change of pace!
Great replacement for potatoes and you vary this recipe with grated cheese, minced chives and/or parsley are nice variations to add. Hand mix these in after blending the cauliflower or add fresh or powder garlic while cooking.
Because you do not cook the noodles ahead of time, this recipe is easy to make.
This is so yummy even my husband who doesn't like eggplant likes it. And my 6 year old picky daughter likes it too.
Serve with rice or flatbreads.
If using fresh instaed of frozen okra, it needs to be dried before cutting. Frozen can be added as it is.
Adjust spices to suit personal tastes.
