Be sure to drain as much fat off of meats and blot with paper towel. You can cook the meats in the microwave after browning to cook out more of the fat before putting into sauce.

the recipe calls for gold potatoes, I subtitute those for sweet potato sticks and bake them the broccolini. Adds a great flavor and take away the heaviness of the smashed potatoes.

My butcher friend gave me the andouille sausage mixture that was left over when he was done stuffing casings. Usually Andouille goes in a casing and into the smoker. I decided to make the bulk, raw sausage into meatballs.

I didn't add any seasoning because the Andouille is pretty highly seasoned already.
