This is my "go to" lunch. Whenever I'm in a hurry or not sure what I want this is my fall-back. It's delicious and very filling!

Like mac and cheese that is healthy. Noodles with sauce that will secretly give you vegetables. Creamy sauce without boatloads of butter and flour. Favorite comfort food that packs a little nutrition.
Low fat plain yogurt, mixed frozen fruit (banana, peach, strawberry), pineapple juice, cranberry juice cocktail. Makes 3 filling servings.
I came up with this because I love thin crust veggie pizza. Just don't want to pay big bucks or calories for take out when I can only eat one slice.
55 calories per serving. You can use less or more salt/pepper as this was a but spicy. I separated and froze in zip loc bags for easy that and microwave lunch. I also used meat from a roasted whole chicken so I boiled the carcass as well then removed it.
These lentil burgers can be made as easily as meat burgers and ideal for a grill in the summer, but equally delicious cooked indoors at any time of the year! If you want to spice them up you can add a teaspoon of curry powder to give them a kick. And yes, they are gluten-free.
This is the tuna salad that my Mom always made and I have never stopped loving. It's great with crackers, on bread or toast, pita pockets, veggies or all on its own.
You can lower the sodium by buying low sodium sweet peas, which we have not been able to find as of yet.
