This is a variation I came up with on my stepdad's authentic Lebanese Taboule. I've substitued couscous for wheat. Looking at the caloric count, it's not very low in calories but it's also not meant to be eaten as a meal. In my house, we wrap it with lettuce and eat it in small quantities with other yummies like stuffed grape leaves or bell peppers.
A quick and easy low fat recipe. I am being pretty loose with the prep time. How long does it take to peel and dice? How long does it take to mash? How many questions will the kid ask while you do it?
When I crave creamy, cheesy rice this is what I make. Great as a side dish for any meal or occassion. Only takes a couple of minutes to make. This is also great to add other veges to besides just spinach. Carrots and celery work well in it too.
Nut-free faux Ricotta made with cauliflower. To make it raw use tahini instead of the coconut cream (or make your own coconut cream!)
I love the combination of flax and peanuts, so I like to mix flax meal into my fresh peanut butter when I use it! YUM!
This is fairly close to Boston Market's Squash Casserole. I've only had it a few times but its gooood. You can make this recipe to freeze ahead for OAMC. You'll be happy to have it in the freezer, I promise! :)
Eat hot or cold alone or with "Yellow and Green"
When eating cold it is good drizzled with balsamic vinegar.
