This is a great low calorie alternative to your traditional maple syrup. Raspberries are also loaded with fiber.
Spelt is one of my favorite flours because it is high in fiber and protein while being good for those with wheat sensativities. This is what I use as a pancake base and I use only organic ingredients. I usualy add blueberries, strawberries, or ground flaxseed for variety. I also experiment with different extracts like vanilla, almond, or orange. To give it a more sweet flavor, add some stevia for even more fiber and no calories or artificial sweetner yuckiness.
I make these with half whole wheat flour and half bread flour. You can make them all wheat or all white, whatever you prefer. Enjoy!
