In my previous recipe for lower cholesterol eggs, I felt that there was too much fat used and that it was too big of a recipe and decided to break it down to make it easier for anyone who is not cooking for a lot of people.....Enjoy!
Thanks Rachel Mac... I really liked your idea of throw in whatever anyone wants and I was pretty pleased with my first rendition & wanted to share it. Hope u don't mind. I'm trying to figure out a savory/spicy take on it to but I haven't figured out how to make something savory without using salt yet.
Thanks again to Rachel Mac's recipe and here is her link:

Like so many people said about her recipe.... the possibilities are endless!!!
A pinto bean casserole; add a crushed-tortilla-chip crust and "vegan cheese" to top it off.
Tuscan-inspired, protein-rich, good for using up leftovers from last night's dinner. Feel free to add whatever other veggies you like to spice it up even more! Occationally I will place the scramble on a toasted whole-wheat English Muffin. Also wonderful, but watch the additional calories.
We were having company for dinner, and I could not find 100% whole wheat dinner rolls, so decided to try making Angel Biscuits with whole wheat flour instead of white flour. I cut some fresh rosemary, washed & chopped it, and put it in melted butter with a little garlic and brushed the tops of the biscuits before baking.....they were yummy. I had enough dough left over to make 6 biscuits, so in the morning, I mixed a couple of tablespoons of splenda with cinnamon to taste and rolled the biscuits in the mixture before baking them (should spray the baking sheet with cooking spray when you do this), and they were a real treat for breakfast! These are not as light as the original angel biscuits, but were really good and we liked them as well, if not better!
can be lower in fat and calories if you use egg beaters, turkey sausage and Olivio to cook ingredients. Sweet sausage work better I think
These choc balls have no chocolate or added sugar & are sweet enough as an afternoon treat. With only 6g of Carbs per ball they are a perfect Diabetic treat for my Type 1 teenager
Have it your way -- as written it is savory. Omit the nutmeg, add a jalepeno or two, and make it hot. Or, keep to the original recipe and add 1 thawed and drained package of frozen spinach for extra veggies.
Chocolate muffins that fit the criteria for the "Core" weight watchers diet. They are no sugar, low fat, and have almost 2 grams of fiber a muffin and they taste pretty good!
