Great recipe for a healthy but not always yummy food. I add lots of black pepper and a little grated parmesan cheese if I need a little extra calcium. Can be refridgerated and used as a snack or a side for up to week after cooking. PREP TIME CUT BY AT LEAST 20-25 MINUTES IF USE FROZEN SPROUTS, but fresh tastes better!

I was after the baked ricotta but realized I had some lean sirloin that was oven roasted the night before that could be tasty on top of an already delicious side item. Why not bake it all up in to one?
As a participant of a summer CSA (community supported agriculture program), we get varied produce every week. This week was Swiss chard, zucchini and tomatoes. I have alwasy wanted to try making lasagna with zucchini noodles rather than pasta. I figured this was my chance.
I was waiting for a recipe from my brother for grilled shortribs and found out it was going to rain. So, I adapted this recipe from one I found on the Better Homes & Gardens website.
My daughter loves this. When we are pressed for time she asks me to make "Presto" because it's so fast (she named it). Sometimes I add olives or green onions. It is also good on rice or couscous. The beauty of this recipe is the versatility and the ease.
