A very fast and easy recipe, perfect to cook after work - and delicious.
When we got home from a recent expedition to the town market (which included a visit to the fishmonger's stall!) I decided I was really in the mood to cook the hake I'd bought (of all the fish I got) and I was soon trawling the web for a recipe to guide me. The search was made especially easy because I knew I wanted to have lentils with the fish. The recipe I found, from Delicious magazine (via Channel 4) is reproduced below (and includes my recipe for spring greens, an inspired addition):
Omelette cooked with green onions and wrapped around slices of sausage (half a link) with fresh cherry tomatoes, seasoned with dill, salt and pepper.
This recipe is perfect if you need a quick lunch, easy to cook. It consists in a fat-free variation of the clasical French "chicken Basquaise".

Place two layers of waxed paper between any extra crepes and freeze them. Let crepes thaw at room temperature for one hour before using.

I liked this recipe because it didn't call for shortening. Beignets are a famous pastry in New Orleans at the Cafe Du Monde. They are delicious and melt in your mouth.
