Lasagna can be VERY high in fat with all the piles of cheese!! Try using cottage cheese instead! You can even add parmasean cheese to the mixture to add a little extra flavor with out the fat!
The only thing bad about this meal, is the high sodium content from the tomato sauce :( - about 1/3 of your daily needs. .
Peel, Cut and Cube eggplant and yellow crookneck squash into 1 inch pieces. Rinse under cold water, drain and spread on 11x15 baking sheet sprayed with PAM. Arrange in single layer and top with sliced onion rings. Drizzle or Use olive oil mister to spray all veggies (coat evenly). Bake uncovered in 375 degree over 20-25 minutes. Remove from oven. Spray a 2 qt casserole and transfer veggies to dish. Stir around then salt & pepper to taste. Sprinkle the garlic powder to top. Spoon jar sauce over all veggies and top with shredded mozzarella, then sprinkle the parmesan on top. Cover and Return to oven another 20-30 minutes (until bubbly). Serve with additional cheese if desired.

I got this from a crock pot cook book that I have. I made a few modifications from the original recipe. The original called for 2 onions, 2 green bell peppers, 3 lbs. ground beef and 2 TBSP of parsley. I used 1 onion, 2 anaheim peppers, 1.94 lbs. of chicken and 1 TBSP of basil.
Also it called for celery, but I left that out. It also showed salt and pepper, but I added that afterwards to taste.
