The trick to learning to like vegetables you hate is to disguise their appearance and flavor. Think about what it is you dislike about that particular vegetable.
I asked Fred why he's anti-green beans. It turns out that he remembers the long, mushy canned beans from childhood.
Step 1: Chop the beans into 1-inch pieces.
Step 2: Change texture. Sauté them in a bit of olive oil, salt and pepper on high heat until they're crispy on the outside and still slightly firm.
Step 3: Change the flavor: Add pesto (with homemade lemony basil from the co-op) and an extra bit of parmesan cheese!
Results: "Is this pasta?" Fred asks as I hand him a plate of beans.

Olive Garden's Soup or Zuppa, this is my low sodium, lower in fat version of my favorite soup to dine out for. Easy to make and leftovers are even tastier the next day! Great along side a salad for lunch or beginning course at dinner.

very yummy. i used only 2 chicken breasts when i made it, because i have such a small slow cooker and there was ALOT of sauce, so you can add more chicken with out changing the amount of other ingredients. the nutrient info is for 3 chicken breasts, 5 servings. i served this over whole wheat pasta ( not included in the calculations) there is plenty of this with just 2 chicken breasts. might also go well over rice or egg noodles. you can also use a whole 8 oz of fat free or 1/3 fat cream cheese, i did half and half (as is the nutrition info)
A delicious creamy Risotto preferrably done with chanterelles, but any of your favourite mushrooms will work! You could also replace the chicken stock by vegetable broth for a vegetarian version.

My fiance and I have this for supper all the time and he just goes crazy for it. We usually serve it with either buttered whole grain bread or garlic bread.
