This simple crab salad with a twist is great in a wrap with lettuce and/or greens and avocado. It can be spritzed with some lemon or lime to add a little zest to it!
I was hungry tonight, and didn't know what to do. So I just pulled every vegetable I had in the fridge out and started cutting them. I then added in some thawed corn and a can of beans.
This is from Deceptively Delicious. I made a few changes. My son can't have dairy so I eliminated the 1/2 cup of plain yogurt. And I felt that the chicken was enough protein and calories, so I also eliminated 2 egg whites (boiled).

Sometimes on a hot night you just want a nice light salad. This is usually one of the salads I throw together.
I think you could cut the oil down to 1/8 of a cup without really losing any flavor. You can eat right away, but for best results refrigerate for a least a couple of hours. This is even better the next day.
My husband and daughter just love this salad. The Rosemary is such a great addition.
Great in sandwiches or placed on a bed of lettuce and topped with a dash of Balsamic Vinegar.
