This is a great Recipe. Very similar to La Madeline without all the Fat and Salt. This is fantastic served with a salad and some crusty bread.

This is a great after the Holidays soup, I could not find a better ingredient choice in the database than the swanson, but I actually used the drippings from my christmas turkey, without the fat, and some boneless skinless chicken breast.
Very delicious soup. Very versatile. You can make this with stewed tomatoes, or v-8 juice or veggie broth instead of chicken broth. You can eat this every day and never get bored simply by changing things up a little. Vary the seasonings. Add chili powder and kidney beans, or try adding a little pasta and some leftover beef chunks and italian seasoning for a minestrone. Let your imagination be your guide.
I have been making this soup for a couple of years now and it's one of mine and my husbands favorites!
It is a little high in the sodium department, but that is from the miso--I have yet to come accross a low sodium miso.

* Add some parsley or marjoram
Delicious veggies soup, easy to make. I usually take it hot, but you can prepare it in summer and have it icy cold!

This recipe started out from the Best Life Diet book. I had never seen the fire roasted tomatoes before. Very nice flavor. I added more vegetables, seasoning and tortillas to the soup itself. I thought it was just as good as any tortilla soup I've had in restaurants. The only thing I would do differently is to add more cilantro at the end. I really like the fresh taste of cilantro.
If you prefer, use your own home made vegetable stock. Most commercial vegetable broth contains tomato, which clashes with the nice baked potato taste of this soup, so I avoid it.
This soup is good, thick, and smooth. With a bit less water it also makes a good dip.
