(Can't believe I neglected to say this!) Recipe is Isa's from VCTOTW. Entered for my own calorie tracking purposes back in the day. Apologies to Ms. Isa! I didn't create this fine recipe, I just like it.
Sweet, moist pumpkin cupcakes laced with dark chocolate chips with hints of cinnamon and vanilla. I use Nunaturals stevia baking blend and make 'em fat free with fruit puree rather than oil. The original, unaltered version can be found on theppk.com, I believe. Or in her cupcake book. :)

I got this from the Taste of Home website and man is it good. It is one of the lite desserts. Their ingredients yielded a little higher calories but not much. It makes 18 servings of 3/4 C each of a very rich holiday dessert layered with gingerbread cake, pumpkin/butterscotch pudding mix and reduced fat whipped topping. Yum!
I made this for Thanksgiving last year as adopted from the William Sonoma Dressing recipe. It was really, really good - but had too much butter - so I cut it down for the recipe provided. I also halved the amount of nuts. Just a hint is great.
Will be less calories than stated, since nutritional label included the syrup, which we do not use in this recipe. This is an alternative to that sugary sweet marshmallow topped usual holiday fare. Though still sweet.
These are my absolute favorite. I eat a 1200 cal diet, and I eat these every morning. I eat all four servings, and they are healthy guaranteed. They taste like a combination of Pumpkin Pie and Pumpkin cookies. I hope you enjoy them!

I converted Alton Brown's sweet potato pie recipe to vegan for my sister in law. My husband claims he can't tell the difference.
"This pumpkin pie has a walnut streusel topping that is optional. Serve with whipped topping or ice cream."
Based on "Self-Crust Pumpkin Pie" (a great recipe), but used Splenda and Splenda Brown Sugar in place of the regular white and brown sugars. This recipe drops the calories to from 133 to 104 and the carbs from 28 to 21.
And it is delicious.
