A chicken pot pie casserole without the crust. I replaced the usual potatoes with butternut squash.

3 Lbs Potatoes Peeled and Sliced Thinly
2 Cups Diced Lean Ham
6 ounces Cheddar Cheese (shredded)
1/2 Onion Chopped Finely
1 Cup Non-Fat Milk
1 Tsp Salt
2 Tsp Pepper

This is the healthier version of my mother-in-laws recipe for Macaroni Pie. (Note: I have also posted her original recipe with full fat and flavor.) It is possible to reduce the fat more than I have here... but I do not like to lose too much flavor, so do what is best for you and you diet!

my favorite holiday treat -- not healthy but splenda sugars, egg whites, and fat free cream cheese can be used to decrease calories. Recipe calls to make 12 whoopie pies, but I prefer making a larger batch of small frosted cookies.
Save calories and keep all the taste of pumpkin pie. You won't miss soggy crust either!
