This recipe was adapted from my favorite recipe for Mexican rice, but since I'm not eating white rice anymore, I figured why not attempt it with a healthier grain? I'm glad I did, because it turned out awesome!
*Just a note, the preparation does involve a food processor, but you can always use a blender.
*Also, if you have some kind of oven-proof saucepan, use that for the whole stove-top preparation to avoid pouring the hot mixture into an oven-safe dish. I need to get one for myself, pronto!

My son is allergic to eggs, milk, and peanuts so we found this recipe that allows us to eat waffles without a reaction! A serving size is 1/2 a waffle. I freeze them and pop one into the toaster for a quick, healthy, breakfast!
Directions:
~ Mix dry ingredients
~ Add milk and oil and mix together
~ Beat egg replacer with water until foamy
~ Add egg replacer/water to mixture
~Cook in waffle iron

This is one of my favorite recipes. It's a crowd pleaser, even for meat lovers. It's super hearty and filling, high in protein, and very versatile. Top with a nut sauce (like peanut butter or almond sauce), marinara, gravy, cheese -- you name it! Serve on a bed of spinach or whole wheat pasta.
Fill a PLATE with warm water and place rice paper sheet into water until pliable (15-30 sec) then lay paper onto dry towel, place salad on paper. Fold top end towards middle then fold bottom towards middle. fold one side over middle and roll towards the other end of the paper. Use with spring roll dipping sauce or a homemade dipping sauce.
I needed a way to give me a protein boost in the morning, that was low on the calories, and quick for me to grab on my way out. I add 1/3 cup of yogurt, but you can use more apple sauce instead, to make it vegan. makes 12 to 15 bars
My mom is diabetic & I'm on the look out for killer vegan baked goods, so we're going to test this recipe out & see if it meets both our needs. Will review recipe once we get around to making it!
This is a recipe from the Native Soods Cafe. It is a wonderful Vegan recipe that is full of flavor. I change the taste by adding spices like Garlic or Chili Powder depending on what I want it to taste like. Enjoy!
