I LOVE this salad. Mom used to make this ALL the time growing up, and DANG it's good. What I love is that the dressing can be adjusted depending on your tastes, and it's great for vegetarians and meat-eaters. Also, AWESOME for pot-lucks, because it works as a main course or a side dish, and it's better the longer it sits.
I got this recipe from Trader Joe's but I have altered a couple things to make it a bit healthier and less calories. But it is still a hearty breakfast if you are wanting to have one large calorie meal in the day. The original recipe calls for two morningstar bacon strips, but I have omitted them because they are really high in sodium. The Original recipe also calls for two slices of cheese and less healthy bread. You can also knock the calories down a bit by using the Sarah Lee Wheat Bread, the one with the measuring tape on the label.
