I got this recipe from the crockpot cookbook I bought. It was so easy and so good! Can easily be frozen whole or sliced into servings and frozen for breakfast on the go.
My vegetarian ( or vegan) version of Jambalaya. I'm easy on the heat but you can add more cayenne pepper and some Tabasco to taste. If you want the recipe more soup-like, you will probably want to add more water.
This makes a thick oatmeal so you can add additional water, milk or even applesauce if you like it thinner.

This recipe works great with any type of bean. Beans can be soaked overnight, the water drained and changed and the beans will last for approximately 10 days in the refrigerator. The soaked, yet uncooked beans, can also be frozen so they are ready to use another day. It takes about 1/2 cup of dried beans to make 1 cup of soaked beans.

This a remade grilled cheese and french fry meal from any typical restaurant. I love grilled cheese but it typically has no nutritional value as it's just bread and cheese! The beans in this re-made grilled cheese add fiber and protein. The brown mustard adds a glue to cheese and gives the sandwich an unexpected tang! The sweet potatoes are much better than normal white potatoes and they are roasted in the oven instead of deep fried. The nutritional information will change based on the brands you use - I am entering the brands I used obviously!
FYI - I've also made this with plain beans that I spiced up myself with a little salsa and mexican spices and then mashed. Feel free to do that if you don't have or like refried beans!
