This is a great alternative to a traditional pasta salad. I estimated on amounts and serving size, as I tend to not measure and use a heavy hand with veggies additions. Tastes great cold and looks great on display (very colorful!).
For real veggie eaters I make spinach pie instead of quiche. More veggies! Also good using broccoli & ham, broccoli & chopped chicken or shredded cabbage and 1 pork sausage chopped.
By using whole wheat flour and regular flour, you get a nice mix of both. Add more/less cinnamon depending on taste. Great when served with warmed apples, blueberries, strawberries, bananas, or just maple syrup and butter.
