Adapted from Nancie McDermott's Quick & Easy Thai, for my family's logging purposes
I made this one night when I had an insane craving for sweet and sour chicken. We had it over soba noodles but it'd also be good over brown rice. Totally killed the craving only without the insane fat and sugar count :D I'd love to hear any suggestions anyone has for swaps and improvements. Surprisingly enough it worked for both mine and my boyfriend's Clean Eating diet and my Mom's Weight Watchers. (it's about seven points per serving)
This is a basic veggie stir fry with a nice, easy and quick sauce that thickens up. I left out the meat because I usually make it with leftovers, so the type of meat varies. Serve over whatever type of Asian noodles or rice you prefer!
All vegan if you make it with veggie boullion. Very low calorie and satisfying. Feeds a crowd. Or me for several days as a filler when I am hungry. I make it without the cornstarch and you can save a few carbs that way. I would experiment a little with the chili sauce to get it to your liking. It's spicy.
If you're looking for a meal with very low calories and lots of yummy veggies then this is definitely one to try!! You can eat tons and not feel guilty! It would be even better with some type of lean cuts of meat as well...chicken, beef or pork.
This stir fry is very colorful and flavorful. it can be laid on top of a bed of pasta or mixed together. The a variety of vegetables can be added or substituted according to your preference.
