A remake of a wonderful recipe from allrecipes.com. Oil was reduced and sugar replaced with Splenda blend. Be sure to use natural no-sugar added peanut butter. The peanut dressing gives a distinct flavor to the slaw. Great side to grilled chicken.
Healthy raw lunch if you have the whole recipe or a nice side salad if divided.

It can also be made with almost any vegetables. You can also try panang curry instead of red curry. This makes great leftovers too!
