Sunday Chicken...one of our favorites! Boneless, skinless chicken tenderloins wrapped in bacon and then top with a mixture of cream of chicken soup and a package of fat free cream cheese. Cover with foil and bake at 225 for about 4 hours. Then remove foil and bake at 350 for 15 minutes. This is great for Sunday dinner...just put it in before church and it's ready by noon! The chicken is so tender and tasty...you can cut it with a fork!

Chocolate cake mix is lightened up by removing the eggs and oil required and substituting with greek yogurt and water. This is very gooey and pretty brownie like.

This flavorful stir fry is quick, easy, toothsome AND vegan. The portions are plenty, and calories few, and because there's no meat, there's no cholesterol! Sub in any veggies you like. I'm usually lazy and buy stir fry mixes from Whole Foods, but you can sub frozen blends, or whatever you have in your fridge. Enjoy!
On a low carb diet, you can have your cake and eat it too. I make this for special occasions when everyone else is eating cake. Also good with other flavors of MAX protein powder (leave out the cocoa).
These cupcakes are not perfect (no lower carb food tends to be the same as the high carb food) but they help me deal with cravings. My oven is sometimes underheating so you might want to test that the time is right for your oven and peek in on the cupcakes at about 13 or 14 mins or so.
