Another muffin recipe experiment using the Any Muffins Master Mix recipe, posted below.
2 cups grain
1 cup milk
1/4 cup fat
1 egg
1/2 cup sweetener
2 t. baking powder
1/2 t salt
up to 1 1/2 c additions

This is a milled mixed grain mixture I concocted in my quest for more whole grain breakfast cereal options. I can make this a 5 grain, 12 grain, 15 grain, or however many grains I have on hand! The added bonus is that it makes great whole grain muffins too :)
This is crunchy and chewy and very satisfying without needing to be too sweet. I eat it with milk alternatives, but it goes just as happily with milk and yoghurt.

Fast, easy, simple and delicious. Personally I don't use any milk in my oatmeal - if you prefer dairy, milk or butter in your oatmeal you can add that separately in Nutrition Tracker. In the grocery store look for "Old Fashioned" rolled oats (i.e. not quick, not fast, not instant) , as it is a lower glycemic option.

This recipe is from Tosca Reno's clean eating cookbook. Serving size is 2 pancakes. I like to make a few dozen of these on sunday and then eat them all week. They reheat super well.
