Stumbled upon this on the Dole site looking at banana recipes for the summer and this looked delicious! I substituted different fruits, but I'm sure you could use whatever you wanted!

i used red cabbage cuase i thought it looked pretty but you can use green if you like. this cole slaw has half the fat and carbs of regular coleslaw and taste absolutley yummy.

What to do with all the lovely squash your garden grows or your neighbor gives you? Cut ends off, halve and slice into half-circles. Boil a big pot of water, and throw the yellow squash or zuchinni into it. Boil until tender. Drain. Mash it a bit with a potato masher. Mix with other ingredients. Bake for 20 to 30 minutes.

So hearty, fulfilling and good for you, i dont know a yummiest way to get your vegetables, plus all the fats in it are good for you, you wont ever miss the meat, if you can find spring onion and 7 spices (5 spices in some places a chinese spice) by all means use it, and you can use any veggie you want, add soy sprouts, eliminate the cabbage, the choice is yours, and the result is always delish
Put whole package of chopped Cabbage mix
Add Mayo & Vinegar ( I use cider or tarragon)
Add 4 packets of Sweet & Low
lightly season with garlic powder
