Ok, so the name "Blizzard" is copyrighted. Well, this recipe isn't QUITE the original, so I will call it a snowstorm. What I left out is the fat and sugar! The Snowstorm has 170 calories per serving compared to the Pumpkin Pie Blizzard mini at 370 calories per serving.
I can't take credit for these, the original recipe I used was submitted by SP user NORRISJT. It made only 6 muffins, used oil and 1% milk. I played with it a bit, to lower the fat and make 12 muffins in a batch. When I was happy with what I had, I couldn't find the original to do a makeover, so I am submitting this version.
As a kid, I was always fascinated with the carrots made out of frosting that adorned the top of carrot cake. This version, made without eggs or dairy but with nutritious carrots, pumpkin, whole grains, and applesauce is reasonably healthy (for a dessert, that is) without sacrificing taste! Use your favourite icing, or just dust some powdered sugar over it.
Dark, rich, moist chocolate 2-layer cake with raspberry filling. Virtually fat free and only about 150 calories. Freezing the cake layers as described results in a super-moist cake. It is easiest to prepare the cake one day or more ahead and assemble the day you want to serve it.
I took this from a Wal-Mart add. I love this recipe and it is low in fat and tastes great. The recipe called for fat free milk but I only had one percent. You can also use any type of fruit you have or like!
