This cheap and easy recipe we had in my family every other week or so. Its easy to adjust to your personal taste, and still tastes good warmed over in the microwave as leftovers. I use frozen veggies, but you can use fresh. It can be made vegetarian easily.

I have seen many variations of this recipe. You can add other spices such as curry powder, cinnamon, fennel, coriander, cardemom, clove, cilantro and other fruits and veggies such as raisins, granny smith apples, apricots, plums, acorn or butternut squash, kalamata olives, all types of peppers, even peanuts. I've seen it prepared with wild rice or couscous. It looks like the possibilities are endless. Let me know if you come up with a different combination than seen below. This is a healthy twist on one of my old faves (a Rachel Ray Recipe), the meatball sub. It uses ground chicken instead of the full of fat beef, and lighter cheeses to make this a delicious but healthy option!
You can choose to pan fry the fish, or to cut fat you can oven bake or broil. Also, omit the cheese if you like, or use your favorite.
By Using Fat free milk and fat free cheese and leaving out the butter, you save over 200 calories! prepared kraft macaroni has 410 calories a cup and 15.5 grams of fat! (3 of which is saturated and 4 are trans fat!) But this delicious version has only 180 calories and .5 grams of fat!
I came up with this recipe to avoid the processed sauces and to have something always ready in the freezer. The wine is not required but it gives a nice depth to the flavor.
