An easy-to-make filling for pasta (such as ravioli, manicotti, or lasagna). This will stuff 16 small (2" square) ravioli or 8 large stuffed shells at 1 tbsp per ravioli. Make more for lasagna or other stuffed pasta.
Super easy to make for when you need something simple and fast, One dish,less than 400 cals and very filling. The only down side is this dish contains a lot of sodium. In my personal experience I can get away with the sodium every now and then, but I know not all diets allow that, so you could always omit the Steamfesh bags and replace with regular rice and veggies to solve this issue, just more prep involved.
This is an adaptation of a recipe from a Williams Sonoma Food Made Fast cookbook. I usually use a bit less dressing a pasta and more spinach.
This is a fantastically simple fish pie which doesn’t involve poaching the fish or making a tedious
white sauce. Loads of good, fragrant veg are added quickly by grating them in.You can use
whatever fish you like, making this as luxurious as you want it to be. If you like your fish pie to
be creamy, feel free to add a few tablespoons of crème fraîche to the fish.
PS Some of the supermarkets now offer lovely packs of different fish and shellfish for using in
fish pies. Keep a look-out, and if you buy one you want it to be about 700–750g in weight for
this recipe.

My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! My husband and teen daughter gobble these up!
A Weight Watcher's style recipe that I've tweaked a bit. The marinade/salsa is soooo good - that I've been known to double the recipe and use with other meals.
Combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper. Mix with lime juice and olive oil. Marinate in the refrigerator 30 minutes. Add avocado before serving.
This is absolutely one of my favorite meatloaf recipes. It is a great crock-pot recipe, but can easily be made on the fly and put in the oven. If using a crockpot, it works best in an oval pot (not the circle pot style) to maximize the juices. I have shared this with all my family members & every one of them loves it too - even my super picky eater of a nephew! You can use green peppers instead of red, I've used both. I recommend using a food processor/chopper to cut up peppers & onion to get very fine.
