This is my take on a Spark Recipe. I adjusted, replaced and omitted some of the ingredients to make it less calorie dense.
I was just in the mood for something hardy & warming...and this was the stuff I had on hand... so I just faked it... I wanted something just a bit different than my old school beef stew, which is tasty too... but it was a "let's shake things up kinda day". I will admit there is a bit of extra work involved - what with needing to roast the veggies...but it's worth it...
Quinoa power bowl with assorted veggies - use what you have. Calories will be lower if you don't use starchy corn or sweet potato. Use left over pulled pork (or chicken) to top. Add a NC vinegar bbq sauce for additional flavor. See other recipe for sauce.
I used the left over beef roast from Christmas to make this tasty 10 min meal!
A delicious recipe that was published in the May 2008 Vegetarian Times. I just can't keep this recipe to myself. A word of caution- This is not a low fat meal.
