This is a very slightly modified recipe from the original, found at GroupRecipes.com. Really, the only changes I made was to replace a couple potatoes with some carrots, and add some balsamic vinegar. I also left out the sazon, since I have no clue what it is.
Great taste with lots of veggies.The gravy adds a nice texture to the mix.
I have just discovered ramps! They are a wild member of the onion family, and taste like a combination of onion and garlic. The original of this recipe came from a blog called Eggs on Sunday. I modified their recipe by substituting fat-free ricotta, and by reducing the bacon to 2 slices from 4. It makes a great dinner or breakfast entree.

You might want to increase the Worcester sauce to 2 tsp, and I have also added mushrooms to this at times. It goes well with brown rice.
We get 8 servings from this, but if you have hearty eaters you might only get 6.
