This is from the cookbook, Skinny Bitch in the Kitch. The original recipe says serves 4, but i used the whole squash and a little extra vegetable stock and kale to serve about 8.

The Fat is coming mostly from the "Venison" but the deer I get are Super lean so it depends on the deer and I process it myself so there is NO added fat by the butcher.
You can cut the salt way down by using a homemade taco seasoning which I will be posting.
This tasty dish is quick and easy to prepare. As a side dish, It goes well with meat, fish or chicken. It's also great as a meatless meal, served with a salad and roll.
Before this recipe, I never ate brussel sprouts. This made me a believer. It is also a great veggie for a Zone eaters -- you get one block in just two cups! This red cabbage and brussel sprouts dish is colorful and flavorful.
The nutritional breakdown uses pork bacon, but turkey works too. You may need more olive oil with turkey bacon because your fat dripping yeild won't be as high. I've tried it both ways and have been pleased. Enjoy!
