The bright orange of the squash and the crimson of the adzuki beans make this quite a beautiful dish. If you like, substitute the more readily available red kidney beans for an equally dramatic effect. The beans get a 14 minute head start before the quick-cooking squash is added. Serve over noodles or rice to absorb the abundant sauce.
Parmesan cheese, Italian Seasoning and tomato sauce add Italian flavor to homemade meat loaf. Serve with pasta tossed with butter or olive oil and Parmesan cheese.
If you want a strictly vegetarian meal, use veggie broth instead of the chicken broth. The nutritional values are calculated with chicken stock.

We also increased the garlic by 2x, and did Not add salt & pepper to the mushrooms after they came out of the oven. We also did Not add more salt to the potatoes after they were cooked.
A meal serving includes 4.25 oz Kale/Mushroom mix, over 7.5 oz Sweet Potato mix. Cut this in half for side dish servings.

Half turkey, half chicken! Ground turkey is often suggested as a lower-fat alternative for meatballs instead of beef, and ground chicken is generally ignored because it doesn't have enough fat to really hold together as a meatball. I balanced both advantages (the even-lower-fat chicken and will-stick-together turkey) and combined the two, seasoning them for poultry. They stay together nicely and are lower in fat than all-turkey meatballs - not to mention that they taste great! This makes a ton of meatballs - plenty to freeze and reheat in the oven for 15 minutes from frozen on a busy night.
Our new favorite taco salad. I add some spices to the ground turkey when browning. I skip cheese & any other condiments, except for salsa & dressing. The lime dressing is VERY limey - so it's not for everyone, but I love it!
