I wanted TUNA CAKES tonight. However, I'm on a cleanse where I can't eat flour, bread, dairy... so I browsed the recipes on here and kind of made one up of my own. Oats are allowed on the cleanse in limited quantities.
You can use whole grain instead of polenta. The salmon has to be marinated for 2h up to 24h. After the salmon is marinated, preheat the broiler to hot. Remove the salmon and the vegetables from the marinade and thread onto two kabob skewers. Place the kabobs under the broiler and cook for 3-5 minutes on each side or until the salmon and vegetables are cooked.
Serve on crackers or toast or on a bed of greens. A great way to get more healthy salmon in your diet!
Found this on EatingWell.com. I tilapia tasted great and was not spicy. I suggest adding a squeeze of lemon juice to the fish after it is cooked.
Tilapia, a relatively plentiful fish, has the unfortunate reputation of being dull. All it needs is a spice rub, a familiar barbecuing technique that works just as well indoors. You could also use this rub on chicken breasts or toss it with lightly oiled shrimp before cooking.
Makes up in a few minutes. Its very tasty and easy to modify to the level of heat you like.
