Indian style spcied rice with black eyed peas and potatoes. Black eyes can be substituted with any beans like chick peas, kidney beas or lima beans.
I have used a pressure to cook the rice. An electric rice cooker can be used to cook the rice after the spices have been sauted on a stove top.
Any type of onion can be used. I prefer red onions Green onions or scallions can also be used.
Adding protein in a vegetarian diet does not have to be a challenge. Lentils fit the bill perfectly.
Recipe listed here previously with recalculated calorie counts and a few minor changes. I used 1 1/2 pounds chicken rather than 2 pounds; I used one can diced tomatoes rather than fresh; I reduced cayanne pepper to 1/2 tsp. and I omitted curry leaves which are not readily available in my area. I also added 1/2 cup water to thin the sauce so the chicken could cook better for a longer period of time.
Toasted and Seasoned Farina. Excellent topped with black chick peas or black eyed peas.
