Getting ready for zucchini season! I adapted this from a recipe in Marcelle Pick's Core Balance Diet. I added the parmesan for extra protein and flavor. These are good for a veggie-carb hit at breakfast -- and taste great. You could also make them into little tiny cakes for an appetizer.
My take on Alfredo sauce - without the saturated fat. This recipe is pretty easy to manipulate - you can add more parmasean cheese (or romano cheese), black pepper and garlic to taste. You can't even taste the tofu, but by adding it, it gives it a source of protein therefore making it vegetarian!
(This is my first recipe I have ever added - it is pretty straightforward, and can easily be changed to your liking... please be kind LOL)

Store bought dressing is not very good. When we eat out hubby always gets Italian vinaigrette dressing. I decided to make it at home and it tastes awesome!

This is a recipe that has been handed down thur our family. I have adapted only by substituting ground turkey for the ground beef. To reduce more calories and fat your could eliminate the shredded parmesan cheese, however, I have come to love this recipe as is and I'm not ready to deduct any ingredients at this point. I have also added the sauce recipe I use it is under the name "Red Italian Sauce"
