Looking to make a low carb, zippy meatloaf. I substituted almond flour for traditional breadcrumbs.
I have a vinegar allergy so I could never eat salad dressings. I got use to eating dry salads but then I discovered I could infuse canola oil with fresh garlic. Yum! Now I love to eat Salads all the time.
I made this with some ingredients I had available - but you could really get creative with your combination of flavors. Just remember to keep it healthy by keeping your stuffing low on fats and sugars. Additionally, this is pretty much a single-serving recipe, so you'll want to plan accordingly if you are cooking for 2 or more.

This makes an easy and healthy breakfast. With the addition of the spinach and tomatoes, this is a good size portion of eggs.
Combine eggs and milk into one bowl. Combine panko crumbs, parsley, pepper, and sea salt (optional). Dip each piece of chicken into milk mixture, panko mixture, milk mixture, and then again the panko mixture. Lightly brown chicken in a skillet with the olive oil until the outside is lightly browned. Place browned chicken into a casserole dish. Cover with Parmesan cheese, then spinach, and then spaghetti sauce. Bake at 375 for 20 minutes.
