I could eat greens every day! Normally these are made with ham hocks and bacon grease, basically full of fat. These are slightly healthier = I also add a large sliced onion but that isn't required.
Aa delicious thai inspired, healthy soup!! Use low fat coconut milk! Feel free to add diced chicken or tofu to this soup to increase protein intake!
In a large Dutch Oven over medium heat butter. Add carrots and onion and saute until soft and translucent. Stir in flour, paprika and dry mustard using a whisk. Cook for 2 minutes then slowly add the chicken broth whisking to prevent lumps. When soup is thickened add shredded Velveeta, the diced tofu and ham. Cook on a low simmer for 20 minutes stirring occasionally.
Yummy tender shredded beef, great for wraps, tacos or over rice, whole wheat pasta or quinoa!

set out salt and sweetener to taste. combine wet and dry ingredients separately and then together. bake at 350 for 30-40min.
