This was something the DH fell in love with on last shopping trip- turned out to be an expensive way to make my homeade Encilada Casserole! So I revised it for a lower Carb Diet.
A great way to hide" the Spinach" and get a simple one dish dinner with on the table. This meal could also be great for Breakfast!

** Note, I wasn't too pleased with the entire appearance and consistency of this Version I've given. My recommendation and trial later will be to chop the Apples instead and add them to the Mixed Batter and cook this as an Original Pancake Batter in a Non-Stick Pan.
Moderately Carbed for Pasta, the Omega 3's added & veggies make it a good quick Meal!
*I make Meat Loaf with this recipe so I can freeze the left-overs for emergencies.
You can add (1) egg & (1c.) crushed pork rinds or cracklins if your not worried about the fat.
Great Low Carb option to get those Veggies in your diet. Good Crock Pot Recipe too!
My version for use on Vegetables, etc. You can of course use regular of low fat Milk instead of the Cream, this was an only thing on hand situation that really worked!
Absoloutely beats the old Tuna melts! In a 'pinch' I've used regular tuna (well drained) & added liquid smoke to it to get the same taste & results!
I've lowered the Carb's- found at Kraft Foods.com, I'll also try some of these without the crust!
this can be reduced 'carbed' by using Spaghetti Squash instead of pasta. It actually tastes better that way! and its a great way to use any left over spaghetti for quick meal.
Great alternative for getting vegetables into diet, low carb & serves pretty too!
