This is a very versatile recipe. You can replace the keilbasa with sausage, bacon, chopped deli meat, or veggies. You can add other veggies like peppers, finely chopped broccoli, mushrooms, or whatever you like.
Chop up steak, chicken, peppers, tomatoe, & onion. It's best to have the steak & chicken prepared ahead of time. Heat your skillet to Medium or Medium-High & spray with butter spray. Pour the egg substitute in the skillet. Then add the meat & veggies to the mixture. If you want you can add the cheese now or later as egg starts to set or when you have it plated with your tortilla. Scoop the egg mixture into two tortillas, wrap, & Enjoy!
Cook your ground turkey, crumble it, and drain off excess grease. Cut up all your veggies, pretty much diced. Crack your eggs in a bowl, add your egg substitute. Throw everything in the bowl and whisk it up. Put 1/2 of it in your skillet (if you have one big enough) cook it up a bit, scramble it, - add 1/4 cup of your cheese, scramble it some more. Put some on a plate and enjoy it! Save the rest for other meals.

I typically make these casseroles and take the pan to work... for breakfast each morning.
