This is a low carb adaptation. There are no potatoes in this particular recipe due to my low carb lifestyle. It is tasty. You may add sour cream as a garnish.
There are many substitutions to be made to this basic recipe. Have fun playing around with it!
This is (a) an improvement on Corner Bakery Cafe's Mom's Chicken Noodle Soup; (b) a large pot of vitamin-rich, naturally sweet, nutritious, chicken soup that (c) is very easy to make, (d) freezes well, (e) feeds about a dozen hungry people, and (f) I make throughout the year after having and making many different variations on a theme for many years
Although it can take a little time to get the chicken off the bones, it's SO worth it! Also, if you don't want to use a whole chicken or shredding it just isn't your thing, you can use chicken parts or whole breasts instead, cut off the big chunks, and dice or shred them. They'll take less cooking time, too.

Since the original recipe submitted by JOEKNEE had ingredients that were higher in carbs (i.e. fat free HH, carrots, turkey), I tweaked it and brought the carb count down some! Remember to calculate Net Carbs (subtract the fiber count from the total carbs) to get the true # of carbs.
I modified this from the Ellen Show (10-05-10). Made it for the Superbowl and put it out with the "other" queso. It ran out first. It's a great faux cheese for nachos. The uses are endless. You can add anything to it... Don't forget to add your chips to your tracker. ;-)

This is my mom's recipe, and is therefore not the most accurate in measurements, so be creative, and don't be afraid to keep tasting.
This is my go to cloud bread recipe.
I've used these to make sandwiches that I though would be impossible on a low carb diet. Very light and fluffy and the flavoured cream cheese really gave them a nice boost!
I love broccoli crunch salad, but have loathed the 400 calories per cup of some of my favorites. I've tried multiple times unsuccessfully to create a healthier version that still tastes like my favorite and that helps me enjoy eating these cruciferous powerhouses without the payback. I think I have finally got it.
Kudos to LIBRARYCAT for the initial recipe I found on Sparkrecipes that led me in the right direction. I still wanted something with less calories and sugars. . .and a bigger portion.

If you like buffalo wings you will love these little appetizers. At only 26 calories each.you can eat almost as much as you want guilt free!! Serve some lite blue cheese on the side and you have a true Buffalo treat!! Did I mention it's low carb and low fat???
Here is a lovely vinaigrette that I have come across during my travels in France and perfected myself. It's definitely tangy and fresh. If you love garlic this vinaigrette is perfect. Serve it with a simple baguette and a bit of cheese, pour on your salads, or dress your meat with it.
A wonderful low-carb taco soup with a kick! Perfect on a cold day! My husband who is not dieting crumbles tortilla chips over the top.
