This recipe started out from the Best Life Diet book. I had never seen the fire roasted tomatoes before. Very nice flavor. I added more vegetables, seasoning and tortillas to the soup itself. I thought it was just as good as any tortilla soup I've had in restaurants. The only thing I would do differently is to add more cilantro at the end. I really like the fresh taste of cilantro.
This is a super easy rice recipe that goes great with any Mexican meal! Add chicken breast or ground turkey to make it a complete meal!
This makes a very flavorful meal. I usually make the chicken and eat as is, without all the other fajitas fixings to cut back on calories. Also great marinade for shrimp!

I found this recipe in a Pilsbury cookbook, but I changed the cheese to reduced fat and did the same with the dip and got a much healthier version
This was a recent recipe in Taste of Homes "Healthy Cooking" that I revamped to make even lighter and healthier. I substituted ground turkey for the beef and used fat free sour cream and cheese instead of reduced fat, which cut 90 calories from their light version. The results were fabulous and a hit with my whole family. Proof that low fat can taste good!
