Mexican Recipes (Most Popular)
I made this up in a pinch for lunch one day. I wrapped it in a low calorie tortilla. Also on another day I put it on top of a salad.
NOTE: This is a wetter casserole. If you prefer it drier, then cut the sauce by half. This is what I did.
A great way to satisfy that craving for Mexican food (and to use that left-over chicken); this dish is sort of a cross between a casserole and a soup, so you may want to use bowls when you serve it.
I love to experiment with different chili powders. This chili provides a great base for playing with peppers!
