Eat this with or without a taco shell. I like mine without a shell to save calories and my family serves over chips or in a shell.
This is a great high protein chili. If eaten w/o the tortilla and sour cream, it is very low cal and fairly low carb. It's great on a cold day, as it is pretty spicy and will warm you up!
I first made this recipe to dehydrate for our backpacking trip. In that instance, I made sure the ground beef was very lean and crumbled into small bits, I mashed the black beans before adding them and minced the celery so it would dehydrate well and rehydrate successfully in camp.
Similar to a good chili, it gets better the more times you reheat it!
Can be made healthier by using ground turkey instead of ground beef.
I came up with this when I was actually looking for an Enchillada Recipe. It's sweet and spicy and is excellent for Enchilladas if you take the extra step and shred it after cooking.
