When I was in high school, my Spanish teacher would make some delicious burritos and sell them to help raise money for a trip to Costa Rica. This is my brother's rendition of her recipe.
Primarily a bean soup, with tomatoes, chiles, corn, onion & spices. Can easily be made low-sodium by leaving out one ingredient.
This is the perfect summer side dish or Mexican meal starter. It's cool, a tinge spicy, and DELICIOUS--especially over a bed of fresh baby spinach spinach.
Serve on heated flour tortillas, with bell peppers or salsa, for a delicious vegan Mexican-food treat.
A friend from Mexico taught me how to make this. She didn't give me a recipe, but she had me watch her make it. The cinnamon adds a nice twist to the sauce. I was able to 'low-carb' it by substituting truvia for the sugar she normally used.
