This tastes just like Weight Watcher's Smart Ones frozen Santa Fe Rice and Beans meal, only it is much lower in sodium, and it has chicken! YUM! It makes a ton, so invite friends or plan to have lots of leftovers. The whole family loves this dish! It tastes much naughtier than it is!!
I love this recipe. I added spinach because I'm not much of a salad eater and it's a sneaky little way to get an extra serving of my veggies for the day. Believe it or not... you can't taste the spinach or even tell it's in there. I make a large batch all at once and save some in the fridge. I haven't tried it yet, but I bet you could also freeze them like a fruit pop.
I love apple pie, deep dish apple pie, Dutch Apple pie and apple sauce, but none of the store bought items fit in my diet. So, I made a combination of all of them only without the sugar, starch or fat. I love my apples this way and have already shared the receipt with many friends.
