My family uses chicken breast more than other chicken parts, so I revised a recipe found here on SparkPeople to make with chicken breasts and cooked on the stovetop.
This tastes great served with brown rice and a nice salad.
NOTE: The recipe can be made with a low sodium worcestershire, but I had regular on hand when making this the first time.
This is my home version of a chicken and rice bowl I used to get at a Mediterranean place when I lived in New York City. It's got brown rice, golden raisins, feta cheese, sun-dried tomatoes, green onion, spinach, and red wine vinaigrette. It's delicious and I make it ahead for the whole work week for both of us.
This is so good, my mother-in-law made this while I was dating my husband and it became a family favorite!
My husband put this together so my calculations are as accurate as I can get them. The soup is 1 can, the rice was one boil in bag unit (I could not remember the exact amount of cooked rice this makes). The chicken is one 1lb boneless skinless breast. The rest of the list was accurate.
So easy. So delicious. Grind up the grahams in your blender or food processor and instantly you have a sweet, crumbly base for these low-fat goodies. Add as many healthy blueberries as you like!
This is the blending of two of my favorite low calorie muffin recipes. I wanted something larger, more substantial, but didn't want to add too many more calories. These muffins are not too sweet, high in fiber, and practically fat free. For those counting WW PointsPlus, they are three WW PointsPlus. If you like a sweeter muffin, you may consider increasing the sugar or adding packets of your favorite sweetener.

These are really good, more like little muffin-cookies. You could probably cut back on the sugar, and use whole wheat flour and some applesauce to take out some of the oil. I didn't have any of that stuff when I made them, so they aren't as healthy as they could be. But they are good!
This soup is great on a cold winter day and is wonderful for freezing and taking to work for lunch.

So, hubby is doing the P90X workout, and the family is trying some of the recipes in the nutrition plan. This soup is AWESOME, and I can eat as much as I want!!!
These are not particularly low calorie or healthy, but I make them on some occasions, so I need the nutrition information. If you make it right, they are very good and chewy.
