I make this chicken salad from leftover rotisserie chicken meat so good , so easy .
This is a light Waldorf type salad with the sweetness of raisins, apples and marshmallows and the smooth tartness of greek yogurt. Super easy and fast to make!

The ingredients that the nutritional info is based on is what was in the Spark Database. The ingredients I actually used were not what was in the Spark Data base, so this recipe is just a guestimate..
THIS IS A DIABETIC RECIPE
I used GREEN ONION which is NOT listed in the Spark ingredients.
I used a cheap cut of beef with NO FAT on it, REDUCED SODIUM soy sauce, broccoli FLORETS which are not listed in the SPARK ingredient list.
(Higadillos Salteados) Smoked, salted Spanish pancetta is traditionally used in this dish, but bacon works fine.

Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
In a large bowl, toss the pumpkin seeds, almonds, and sunflower seeds and the syrup until evenly coated. Spread the nuts and seeds out, in an even single layer, on the lined baking sheets and season with salt to taste. Bake the nuts, stirring several times with spatula or wooden spoon, until just golden, about 20 minutes.
Cool the nuts completely on the pan, then add the cherries and toss to combine. Store cooled trail mix in an airtight container at room temperature.
This is the greatest recipe for a quick meal or snack! I haven't met anyone yet who didn't like it (except my extremely picky 7 yr old!). Perfect for breakfast, brunch, Potlucks, or anytime!
Broil or Grill! These burgers taste great and re-heat well for leftovers!
We have a child who is dead set against eating anything that might look healthy. Thought we would try hiding things from him in order to see if we could finally get him to eat it.
This has been a family favorite for years! But I've modified it a bit to lower the fat and calories. I used Ragu Light Tomato & Basil instead of marinara and you can lower the fat and calories even further by using part skim mozzarella.
I usually use ground (or diced up) chicken, but tried it with turkey and it was just as good...so I calculated it using turkey. NOT INCLUDED in the nutritional values, but recommended topping would be a tablespoon of sour cream. It totally makes the dish!
